Ingredients
For the pliable Ganache:
130 g dark chocolate 60%
180 g Pristine Whipping 100% Plant Based
20 g water
50 g glucose
120 g raspberry puree
1 g gelatine sheets
1.3 g agar agar
For the pistachio Namelaka:
300 g Pristine Whipping 100% Plant Based
50 g caster sugar
65 g white chocolate
2 g gelatine sheets
10 g water
40 g pistachio paste

Preparation
For the pliable Ganache:
Heat the Pristine Whipping 100% Plant-Based, glucose, water and agar in a saucepan until simmering and cook for 1 minute.
Emulsify with the blender and pour into a plate. Leave to rest in the refrigerator for at least 3 hours. Cut into the shape of an isosceles triangle or any desired shape.
For the pistachio Namelaka:
Heat the Pristine Whipping 100% Plant-Based and sugar to 40 degrees, add the rehydrated gelatine and melted chocolate. Emulsify with a blender and add the pistachio paste.
Cool and leave to rest in the fridge for 8 hours. Whisk until you obtain an airy structure and place in a piping bag. Plate and decorate with fresh raspberries, sanded pistachios and Cervia salt crumble.
