with parmesan cream and nutmeg

Preparation
For the Parmesan creme, bring the Pristine Cooking 20% Cream to the boil in a saucepan. Add 100 g of parmesan and nutmeg.
Emulsify with a whisk until smooth.
Place the remaining Parmesan inside a plastic
pastry cutter on a flat plate, flatten with a
spoon and cook in the microwave for 1 minute
at maximum power until it becomes a crispy
wafer.
Cook the tortellini in beef broth or salted water, drain and stir them in a pan together with the
Parmesan creme.
Serve by placing the Parmesan wafer in the centre of the plate with the tortellini arranged around it. Add a thin layer of sauce over the tortellini and sprinkle with nutmeg.
