with exotic caramel

Preparation
For the pannacotta:
Heat the Pristine Whipping 100% Plant-Based and the sugar in a saucepan. Combine the gelatin previously hydrated in cold water and emulsify everything with a whisk.

Set half the mixture aside and add the vanilla
pod seeds.
Pour the first half into glasses tilted at 45° and
allow to set in the refrigerator.
Then pour the other half with the vanilla into
straight glasses and allow to set again.
For the exotic caramel:
In a saucepan, melt the sugar, caramelising it.
Add the heated Pristine Whipping 100% Plant-
Based and emulsify the butter with a hand
blender.
Add the fruit puree and continue blending.
Leave to cool in the refrigerator.

Far raffreddare in frigorifero.
Place the caramel in a piping bag and create
waves on the panna cotta in the glass. Decorate
with crunchy, dark chocolate pearls.
