ZUCCHINI CREAM WITH MUSHROOM SKEWER

Ingredients

For the cream

 
  • 500 g of zucchini
  • 100 g Pristine Cooking Dairy Free
  • 1/2 L vegetable broth
  • 3 sprigs basil
  • q.s. chives
  • q.s. extra virgin olive oil to taste
  • Salt and pepper

For the mushroom skewer

 
  • 300 g mixed mushrooms
  • q.s. extra virgin olive oil
  • Salt and pepper

Cream preparation

 

Cut the zucchini into slices and let them cook with oil. Add the boiling broth and cook until soft. 

Blend by combining the herbs, pepper and, if necessary, some salt. Finally, add the Pristine Cooking Dairy Free cream

to give creaminess.

Preparation of mushroom’s skewer

 

Clean the mushrooms and cut them into large pieces. Sauté them over high heat with oil, salt and pepper.

Decoration

Pour the cream onto the plate, sprinkle with some of the chopped mushrooms. Decorate as desired with a spoonful of

Cooking DairyFree e foglie di cerfoglio. Disporre sopra lo spiedino di funghi e servire.
